Speculaas vs Speculoos

A less flavorful cookie is called speculoos; it is what is most commonly found in the United States today. When the exotic speculaas spices were still scarce (and therefore expensive), speculoos was developed as a less costly alternative to speculaas. It excludes nearly all of the traditional spices and instead, relies mostly on sugar caramelization for flavor. Speculoos generally lacks the depth and richness of flavor of real authentic speculaas.

The traditional speculaas spices consisting of nutmeg, pepper, coriander, mace, ginger, cinnamon, cardamom and clove, and they form the core of Van de Loo’s Original Speculaas to this day.
